§ 01 — the idea
the night before the festival. one long table. thirty seats. four growers cook with the chef, pour their own wines, and answer every question you have.
this is the room where the festival starts to make sense — before the floor opens to two thousand people. the winemakers fly in, drop bags at the hotel, and come straight to the kitchen. by the time you sit down they're already in the room.
seats are limited. they tend to go to people who care about how the wines were grown, and to anyone who wants to actually meet the people behind them — not just taste them quickly between two crowded tables.
